10 ml balsamic vinegar, white

1 pcs. clove of garlic, cut

100 g yolk(s)

50 ml milk

10 g capers

10 g Dijon mustard

200 ml canola oil

10 ml lemon juice

10 g anchovy fillet(s)

150 ml vegetable stock

Directions
Put all ingredients in a jar and season with salt and pepper.
Puree the mixture finely with a blender and pour directly through the iSi funnel & sieve into the 0.5l iSi Whip.
Screw on an iSi Professional Charger and shake it about 16-18 times.
